the easiest dinner you'll ever make, I swear

One of the purposes of this blog for me is to share and "library" (for lack of a better word) life hacks, recipes, et cetera that I find.  And this one is maybe one of my all time favorites.  I'm one of those people that likes things to be super easy.  It's the result of birthing three children.  I just don't have the time I used to.  So, while my husband has been commuting to PA for work training the past few weeks, I've had to manage the kiddos, and dinners, and everything else on my mom plate.  One day in particular I looked up a slow cooker recipe for a pork roast we had in the freezer.  Hubby was due home that night and I didn't want him to feel like he had to cook. 

My requirements for this recipe?  It could not require anything I didn't have in the house, that oh by the way, I'm packing up for a cross country move.

And... I detest chopping ingredients.  I also detest having to pre-cook meat that is going in a slow cooker.  Kind of defeats the purpose for me.

Three ingredients, and quite frankly the easiest dinner I have ever prepared.  When my husband got home, he threw the remaining rice we had in the pantry in the rice cooker and about an hour later we were eating delicious, tender pork over a bed of white rice.  He had seconds that night.  And then we had two more meals from it: shredded pork sandwiches with barbecue sauce, and shredded pork over egg noodles (we're cleaning out our pantry and fridge!).  

I just absolutely love people that can come up with this stuff, and then will share it.  They'll post pictures of it too, and put it on a pretty web site.  That takes effort, and time, and yet it's provided free.  FREE!  This gal's web site is exceptionally pretty and I'll be going back for more.
